Biscuit & Gravy Casserole

What more do I need to say? Its biscuits & gravy.... as a casserole! A comforting breakfast favorite all combined into one dish. Fast, easy and that classic flavor we all love. Give it a try!

Crank your oven to 375 and lets do this!


Biscuit & Gravy Casserole
*This makes a large 13x9 casserole, feel free to half the recipe*

2 Cans flakey biscuits
2 Pounds jimmy dean sausage
4 Cups country gravy (Thick)
1 Onion, chopped
2 Tablespoons minced garlic
1 Tablespoon butter

Pre-heat your oven to 375. Caramelize your onion in butter and garlic, add sausage and cook. Prep 4 cups of country gravy weather its from a packet or homemade from your sausage grease prep right around 4 cups. I prefer my gravy to be thick but of course whatever your preference will work!  Pop your  biscuit cans and cut them into pieces of 4. Layer half your biscuits on the bottom layer of a greased casserole dish. Bake bottom layer of biscuits until they begin to get golden so your bottom layer is cooked. Once brown stir your sausage and onion mixture into gravy. Allow to simmer for a couple minutes. Pour entire mixture over your bottom layer. Take other half of biscuits and layer the rest of them on top of your casserole. 

Bake for 10-15 Minutes or until your biscuits on top get brown.

*Tip* This is an easy recipe. Too much sausage? gravy? no problem... make it work for you. This is the basic layout of how to make a slam dunk breakfast great for feeding family visiting during the holidays!!

Moonstruck Breakfast


I grew up a swiss italian. In a family that was proud of it! Needless to say from music to movies there were some italian themes that were favorites. One of my Mom's favorite movies is Moonstruck. Click HERE to watch a trailer if your not familiar. We find ourselves quoting this movie quite often. Our favorite being, "SNAP OUT OF IT!" This movie revolves around family and the crazy things that sometimes happen. The plot builds up to a hilarious way it ends that leaves you wanting more! The dialog, food, and music just brings this movie together into a favorite. This movie is a romantic whirlwind full of laughs. 

Anyways there is a scene in the beginning of the movie where the mother, Rose is cooking breakfast and its this recipe right here. WATCH THE SCENE HERE. Red peppers over a egg in the hole! Simple but so delicious! Letting the bread toast to a golden crunch in melted butter. This is a heavenly breakfast I cook quite often and every time I do I can't help but think of this movie!

Weather you know the movie or not this recipe is a slam dunk for a delicious breakfast!

When the moon hits your eye like a BIG pizza pie thats ammmmmmore!

Moonstruck Breakfast

1 slice bread. (I recommend sour dough or english muffin BREAD)
1 egg
1/4 of a red bell pepper sliced into strips
2 tablespoons butter
dash of salt & pepper

Saute your red peppers in butter until caramelized and tender. Using a knife or small  round cookie cutter cut a hole in the middle of your slice of bread. Using leftover melted butter in pan or adding some more take your piece of bread and coat both sides in a little butter. Lay one side down and crack your egg right into the hole. Cook on one side until egg cooks up from the bottom a little. Flip and cook until finished on the other side. 

Serve with peppers over the top and enjoy!

Sweet Pepper Grits

This past week Westen the dogs & I went on a little getaway. A much needed one up on the mountains  to our family cabin.  My parents met us up there and we all kicked back from a few days. Away from civilization and only hearing the distant train every morning and night. Breeze in the aspens, tall grass waving around. It was indeed heaven. Days kicked back on the porch playing cards, going on hikes, walking in the evening to the stream to catch some fish or just visiting and going around with jokes makes going to the cabin one of our favorite little getaways. Within a few hours were up in this beautiful place away from everything. We did not go to a parade or see any fireworks on the 4th of July this year.. Instead we had an ice cold beer with delicious food and kicked our feet up away from it all and soaked in the quiet serenity... well not counting the laughing and joking of course... but if we could zip our lip for a minute or two it was quite peaceful. We had our window open right above our bed in the loft and its amazing how well a person can sleep when the natural sounds of the wilderness are singing you a lullaby. Oh how I wish I could sleep that well at home!  To sum it all up you just NEVER want to leave and just stay up there on mountain time.

 Trips to the cabin seem to end up with memories made, laughs shared and above all delicious meals!

Little place I like to call heaven.
I don't know what it is but we have lots of ambition to make delicious meals and try new things! I guess when your miles away from the nearest grocery store your inspired to take what you have and make delicious meals! Thats what we do! My dad whips up the most amazing spiced pancakes, Mom fries the the stream fish we catch in a crunchy savory bite. I usually make a crazy amount of things! Southwestern macaroni salad, Salsa & Guacamole. All time favorites such as those!  So one morning I woke up inspired to do a play on a favorite breakfast side of mine. My dad will frequently cook a batch of grits to go with eggs and bacon. His grits are so good but I though't I'd get a little creative and maybe bring them to a new level of flavor, and I did. This recipe is oh my heck amazing so get yourself this line-up of ingredients and make yourself some!

Sweet Pepper Grits

1 Batch Albers quick grits cooked grits I follow the 4 servings guideline
2 Medium sized sweet bell peppers. Yellow/Orange mix is what I use
1 Large onion chopped
1 - 1 1/2 cups shredded colby jack cheese
1/2 Teaspoon salt
3 Tablespoons butter (I didn't say it was healthy HA , HA!)
1/2 Teaspoon pepper
1/4 Teaspoon garlic powder
1/4 Teaspoon chili powder

Caramelize your onions & peppers in the butter in a saucepan over medium high heat. Once caramelized add to your pot of cooked grits and stir it in along with all your spices and cheese. Cook until bubbly and cheese melted! Add any extra cheese, or spices if you want more. I use Albers quick grits but really any plan batch of grits can be transformed into this savory mixture!

Serve with some eggs, bacon and toast! Enjoy!

Easy Breakfast Casserole


Being a wife to an HEO at the power plant comes with early mornings leaving for work. Like a lot wives I am always wondering what to send with my man to get him through the day. FINALLY!  I have thought of the perfect solution and of course now I'm asking myself why didn't I think of this before?? Nevertheless, now I am a religious baker of this easy breakfast casserole. Or as I sometimes like to call it... The WORKING MAN'S BREAKFAST! (Or  working woman's of course... ) It is SO nice to have this ready to go for him to warm up when breakfast time rolls around at work. It is also nice to have baked up when I have a houseful of guests. I hope you give this a try. It will make packing the lunch box go a lot smoother or it will also make feeding a houseful of guests a breeze!! This casserole is great! Simple as that! 
                                        
                                         So turn your oven to 350 degrees and lets do this!

Did I mention there was cheese on it? Oh yes... 

   Easy Breakfast Casserole
                                              
  2 pounds cooked & crumbled breakfast sausage
                                                     Half of a purple onion / chopped                                                     
 1 Cup cheese
  1 Dozen eggs
  1/4 Cup milk
   1 Teaspoon salt
     1 Teaspoon pepper
        1/2 Teaspoon chili powder
        1/2 Teaspoon garlic powder

Set your oven to 350 degrees. Grease a 13x9 pan and pour crumbled sausage in the bottom of the pan. Sprinkle over chopped onion evenly over meat. In a large bowl whisk eggs, milk and spices together. Pour egg mixture over onions and meat. Sprinkle the cheese over everything and bake for 30-35 minutes or until golden and bubbly. 

What is AWESOME about this recipe is you can pretty much add anything you would desire in it. Hash browns, spinach, diced chilis, bacon, pretty much everything but the kitchen sink! This recipe has the basics but you can defiantly get creative and add whatever flavors you desire into this!

*For the working man I cut potions out and freeze them in sandwich bags and get the next day's breakfast out the night before*
