Summertime inspires me to try and come up with recipes that just go along with the season. Cilantro lime rice is a light fresh side dish that just brings summer to the table. A perfect side to mexican meals, or even a compliment to a piece of marinated chicken. I love cilantro so any opportunity I have to use it in a dish I do so. The fresh crisp taste to this herb mixed with fresh lime juice brings plain ole rice to a whole new level of YUM!

Cilantro Lime Rice
2 Cups uncooked rice
1 large onion
1 Bundle of cilantro chopped
3 Cans chicken broth
4 limes juiced
Zest from 2 of the limes
2 Tablespoons minced garlic
1 Tablespoon olive oil
1 teaspoon salt
Heat oil in a pot on the stove over medium high heat. Add garlic and chopped onion and cook until fragrant and caramelized. Add rice, salt and stir constantly so it doesn't burn. Let cook for a couple minutes. Add chicken broth and lime juice with zest. I add 1 and 1/2 can of broth and let rice simmer over medium heat and covered. As rice absorbs it add more broth to keep from burning to bottom of pot. Stir occasionally but let the the steam do its magic under the lid. Cook until rice is cooked through, 20-30 minutes. Add chopped cilantro and any more lime juice if desired. Stir in majority of chopped cilantro leaving some for garnish.
